It really depends on your sailing experience where you can go sailing. But of course also whether you want to be assured of summer temperatures or whether it may be a little less hot.
The Caribbean is a destination where you can sail the best in the winter. The most organized and protected are the British Virgin Islands. Everything outside of it requires some more sailing experience.
Thailand is also a destination where you go sailing in the winter. In the Summer there is a big shower every day. A good experience with sailing and anchoring is recommended for Thailand.
The Seychelles have the best weather for sailing from May to October. Good preparation and sailing experience is required here.
The Cape Verde are beautiful, this is a destination for adventurers with a lot of sailing experience. The best time is from December to June. Then there is almost no rain and it is not too hot.
The Canary Islands certainly invite the experienced sailor who wants a little more wind . You can sail all year round.
